I saw a nice demo recently from the folks at AssureBuy. They have very nice app for processing Credit Cards and other types of payments. The app is dexterity based and doesn't modify any existing GP tables, so it should be pretty robust at surviving upgrades, service packs and customizations.
I asked the questions I thought you would ask and yes it masks the CC info after the initial entry, yes it supports payment acceptance only after shipping as option and yes it supports reusing the same card without reentering the info.
Also available are web options for CC processing (if you have a mobile sales force or for occasional items like trade shows), web presentation of invoices to clients and electronic check processing to reduce those trips to the bank.
